Tasting Notes
Clément Canne Bleue rhum possesses a diamond-like clarity in your favorite tasting glass.  Swirling produces no legs, the rhum runs down the side of the glass in a single sheet.  A bouquet of sweet fruity perfume appears more like a whisper, followed quickly by sweet grassy aromas of fresh sugarcane and the slightest hint of tobacco and banana.  Canne bleue is remarkable not for its complexity but for the purity of a single essence.  It's the closest thing to a pear au de vie you're likely to find.  The initial taste is mildly sweet of sugarcane juice, yet dry from the high ABV,  with ever so slight vanilla, anise and white pepper spice.A semi-full body coats the tongue with a pleasantly greater viscosity than expected from an overproof rhum agricole blanc, leading to a finish is of moderate duration, yet longer, sweeter and smoother than expected.  Clément, you have produced the finest rhum agricole blanc.

Anecdotes
Rhum Canne Bleue is unique in that is distilled only from blue sugarcane - Clément is the only producer on Martinique to use a single strain of sugarcane in any rhum..  All sugarcane for Bleue Canne is grown on Habitation Clément’s estate.  As a plant, the monovarietal is characterized by its purplish-gray color and rich sugar content.  For making rhum, it is prized for its exceptional aroma.  The finest of the blue cane distillates is reserved for Rhum Canne Bleue, and some is also used in the Clément’s aged Tres Vieux Single Cask Canne Bleue rhum.

Habitation Clément ceased distilling at their estate and transported one of their column stills to the Simon distillery in 1987.   Another still used by Le Simon came from Babitation Saint-Etienne, and Simon had two of their own columns, making for a total of four column stills smoking at the distillery. Clément rhum has been distilled at Le Simon ever since, yet sugracane has been grown continuously on Clément’s plantation, and all Clément rhum is aged on their beautiful historic grounds.  The Canne Bleue blanc rhum reviewed here and Clément’s Single Cask 8 year rhum vieux are only produced in the still that was moved from Habitation Clément to Le Simon.

After distillation to about 70%ABV, the canne bleue spirit is rested for 9 months in stainless steel tanks, and diluted with water at a rate of about 1.5% ABV. every two weeks (approximately.)

Opinion
Clément Canne Bleue’s physical presentation is perfect, commanding attention in silent stature like that unquantifiable attribute called Stage Presence.  A tall slender bottle reveals enough feminine curves and a transition of color to attract your attention on a shelf on in a bar rack.

Canne Bleue is distinguished by its clarity of taste.  An eminent pedigree makes it equally well poised for sipping or making a classic ‘Ti Punch.  Personified, Clément Canne Bleu smells of haute femme, sips like a delicate kiss from full lips, and leaves the same impression:  Let’s do that again.
