Tasting Notes 
Very Smooth.  Papagayo Silver rum is colorless, as in crystal clear.  In active appearance, swirling this rum in your tasting glass before nosing is a mistake, as the alcohols volatilize rapidly then lay inside the glass, and are pretty rough to sniff.  The rum attacks your nose at even carefully slow approaches, making subtle sniffing difficult.  Nevertheless, we press on and detect an interesting, brusque and raw sugar cane spirit aroma. 

On initial taste, Papagayo Silver redeems itself fully.  It is much smoother when sipped than the aromas indicated, the medium-heavyweight body delivering a buttery croissant texture that really pleasures your palate.  Theres some grassiness too, more like lawn grass and far more subtle than the sugarcane stalk flavors of an agricole rhum from Martinique, but the distinct flavor is intriguing.  The rum finishes dry with a moderate vegetal flavor before fading quickly.

Anecdotes
Papagayo Organic Silver Rum was launched in 2002.  It begins with organic and fairtrade sugarcane grown and distilled on the Manduvira Cooperative, a single estate plantation in the Arroyo y Esteros region of Paraguay, roughly 60 miles north of the nation’s capital of Asuncion.  The sugar is rended into molasses, then fermented in open-top tanks using a yeast culture developed by the distillery.  That fermented, low-alcohol wash is column distilled to 94% ABV, then  diluted and charcoal filtered. The rum is imported to the USA by Altitude Spirits of Boulder, Colorado, a company that specializes in organic spirits sourced from various locations the world.  To achieve “Organic certification,” the sugar cane must be grown in open air under sunshine and a complete absence of chemical fertilizers or pesticides. 

Opinion
Papagayo Organic Silver Rum tastes something like a cross of a South American molasses rum and Cachaça.  People more familiar with Paraguay than me might shed some light on the country’s rum preferences, but to my taste, Papagayo Silver strikes a nice balance between the white sugarcane spirits produced in Brazil on the one hand, and the West Indies on the other.  It tastes clean, a little different and not especially aromatic.  Papagayo Organic  Silver rum makes a nice contribution to the slowly growing elegant white rum category popluated by such standouts as Plantation 3 Stars, Denizen, Diplomatico Blanco and Mount Gilboa white.  It's priced at twice that of the mass-produced white rums, but in this case, you get what you pay for.  Try it in a mojito or caipirinha.
