ADL's three-column copper still was designed by David Webb, and derfurbished in 1991 - making it the youngest of its type in the Caribbean.
ADL is experimenting with a stainless steel sheath on one of their copper columns. The art of making fine rum is always evolving.
ADL's spirit lab - Note the mini-still at right. Every barrel of rum is analyzed by gas chromatography and tasted at 20% ABV for quality and flavor.
Rum is aged in ex-Jack Daniels barrels at 70-80% ABV. ADL is slowly reducing the strength at which the spirit laid down, to 62-65% ABV for a "rounder flavour."
