After the sugarcane has been crushed and allowed to dry (then called bagasse), it is used as fuel.  Burned in these furnaces, flames heat water boilers for the steam engine and steam is injected into column stills to distll the fermented cane juice. 

Spent sugarcane, after it is crushed and dried ( called bagasse) is burned in these firnaces to heat the boilers used by the steam engine and for distlling the fermented sugarcane juice (vesou) in the column stills
