Into the smaller stainless steel Starter tank (left) goes the sweet sugarcane juice vesou and yeast to initiate fermentation.  That active mix is then added to vesou in the large Mother tanks (right) to ferment into a vinasse of about 5-7% ABV.  These huge tanks currently lie fallow at Trois Rivieres distillery.
