Tasting Notes
Very Smooth.  Trois Rivieres Cuvée Du Moulin is bright reddish-gold in color, with a profusion of slowly dripping legs, and then more legs; this rhum is certainly pretty in the glass.

A musky bouquet of toffee and caramel exudes as soon as the generous-sized cork is lifted form the bottle.  Portents of nectar to come?  Aromas: sugarcane shines at the forefront, then mildly toasted oak and some musty leather, with softer notes of anise, spent/crushed sugarcane stalks, white pepper, limestone and mineral, and some prune that rounds the aromas off.  Caramel and vanilla are present in a supporting role.  A sip reveals the grassy taste of fermented and distilled fresh sugarcane that we love about rhums agricole.  The medium-lightweight body delivers soft flavors, with light caramel, mildly smoked oak and kid leather before the long finish falls away with mild caramel and a hint of pepper.

Anecdotes
Trois Rivieres Cuvée De Moulin is packaged in a dignified, square-section bottle that manages to be impressive without being ostentatious.  The natural composited cork stopper aids the bouquet’s release and adds a nice touch.

Opinion
Trois Rivieres Cuvée De Moulin makes for a pleasant rhum date.  It is analogous to a good guest at a cocktail party; professionally dressed, occasionally sweet, always circumspect, holding its own in a complex conversation that’s neither controversial nor too erudite.  For those long days when you need a supportive listener and don’t have the wherewithal for a dazzling tête–à–tête, Cuvée Du Moulin is just a call away.

The Rum Gallery’s good friend Steve Bennett of Uncommon Caribbean captures the nature of Trois Rivieres Cuvée De Moulin in his entertaining allegory.
